Sheet Pan Mini Meatloaf and Roasted Potatoes


 A one-pan wonder that brings comfort food to a whole new level! 🍽️ Get ready for Sheet Pan Mini Meatloaf and Roasted Potatoes – the perfect weeknight dinner. Easy, delicious, and guaranteed to satisfy! 💥 Ingredients:

For the Mini Meatloaf:


1 lb ground beef (or ground turkey)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

1/4 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

1/2 tsp dried thyme

1/2 tsp dried oregano

Salt and pepper to taste

1/2 cup ketchup (for glazing)

For the Roasted Potatoes:


4 medium potatoes, cubed

2 tbsp olive oil

1 tsp garlic powder

1 tsp dried rosemary (or thyme)

Salt and pepper to taste

Instructions:

Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.


Prepare the meatloaf mixture: In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, milk, onion, garlic, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix until well combined.


Form the mini meatloafs: Divide the meat mixture into small portions (about 6-8 mini meatloafs) and place them on one side of the sheet pan.


Prepare the potatoes: In a bowl, toss the cubed potatoes with olive oil, garlic powder, rosemary, salt, and pepper until evenly coated. Arrange them around the mini meatloafs on the same sheet pan.


Bake: Place the sheet pan in the oven and bake for about 25-30 minutes, or until the meatloafs are cooked through and the potatoes are golden and crispy. During the last 5 minutes of cooking, brush the top of the meatloafs with ketchup for a sweet glaze.


Serve and enjoy: Once done, serve the mini meatloafs with the roasted potatoes, and enjoy a cozy, hassle-free meal!
