Ingredients:

For the Sausage Rolls:

1 lb ground sausage (preferably seasoned)

1/2 cup crumbled feta cheese (optional, but adds great flavor)

1/2 cup diced onions (optional)

1/4 teaspoon garlic powder

1/4 teaspoon dried thyme or oregano

1/4 teaspoon black pepper

1 sheet puff pastry (store-bought or homemade)

1 egg (for egg wash)

Salt, to taste

For the Pepper Jelly:

1/2 cup red pepper jelly (store-bought or homemade)

1-2 tablespoons apple cider vinegar (to taste, for extra tang)

Hot sauce (optional, to taste, for more heat)

Instructions:

Step 1: Prepare the Sausage Filling

In a mixing bowl, combine the ground sausage, crumbled feta cheese, diced onions (if using), garlic powder, thyme, black pepper, and salt.

Mix everything together until well combined. If the mixture feels too loose, you can refrigerate it for 30 minutes to firm it up.

Step 2: Prepare the Puff Pastry

Preheat your oven to 375°F (190°C).

Roll out the puff pastry sheet on a lightly floured surface to smooth out creases. Cut it into long strips about 3-4 inches wide (depending on how big you want your rolls).

Take a portion of the sausage mixture and shape it into a log along the length of the pastry strip. Leave a small border along the edges for sealing.

Step 3: Assemble the Sausage Rolls

Carefully roll the pastry around the sausage mixture, pressing the edges to seal. Make sure the seam is at the bottom so the rolls stay together while baking.

Beat the egg and brush it over the top of each roll to give it a golden finish when baked.

Cut each roll into smaller, bite-sized pieces (around 2-3 inches each) and place them on a baking sheet lined with parchment paper.
