A quick, healthy stir fry loaded with Mediterranean flavors—perfect for busy weeknights!


🛒 Ingredients:

1 lb ground beef

1 tbsp olive oil

1 small red onion, sliced

2 cloves garlic, minced

1 zucchini, sliced

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

1 tsp dried oregano

½ tsp cumin

Salt & black pepper to taste

2 tbsp feta cheese, crumbled (optional)

2 tbsp fresh parsley, chopped (for garnish)

👩‍🍳 Instructions:

1️⃣ Cook the Ground Beef:


In a large skillet, heat olive oil over medium-high heat.

Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.

2️⃣ Sauté the Vegetables:


Add red onion and garlic to the skillet, cooking for about 2-3 minutes until softened and fragrant.

Add zucchini, bell pepper, and cherry tomatoes. Cook for another 5 minutes, stirring occasionally.

3️⃣ Season & Simmer:


Season with oregano, cumin, salt, and pepper. Stir well to combine.

Let everything cook together for an additional 2-3 minutes, allowing the flavors to meld.

4️⃣ Finish & Serve:


If desired, sprinkle feta cheese over the stir fry for added creaminess.

Garnish with fresh parsley before serving.
