Italian Almond Cookies (Ricciarelli) 🌰✨


 



Ingredients:


- 2 cups (200 g) almond flour 🌰  

- 1 cup (200 g) granulated sugar 🍚  

- Zest of 1 orange 🍊  

- 2 large egg whites 🥚  

- 1/2 teaspoon almond extract 🌿  

- 1/4 teaspoon vanilla extract 🍦  

- 1/4 teaspoon salt 🧂  

- Powdered sugar, for dusting 🍚  


Directions:


1. Preheat the oven:

 Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.  


2. Mix the dry ingredients:

 In a large bowl, combine the almond flour, granulated sugar, orange zest, and salt. Stir well to combine.  


3. Beat the egg whites:

In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form.  


4. Combine the mixtures:

 Gently fold the beaten egg whites into the almond flour mixture. Add the almond extract and vanilla extract, mixing until a dough forms. 


5. Shape the cookies: 

Scoop about a tablespoon of dough and shape into small oval or diamond shapes. Place them on the prepared baking sheet, leaving space between each cookie. Dust generously with powdered sugar.  


6. Bake:

 Bake in the preheated oven for 20-25 minutes, or until the cookies are set and slightly golden on the edges.  


7. Cool and serve:

Allow the cookies to cool completely on the baking sheet. Serve these delightful almond cookies with a dusting of powdered sugar for an authentic Italian treat!
