Ingredients
1 cup graham cracker crumbs
½ cup unsalted butter, melted
8 oz cream cheese, softened
¼ cup powdered sugar
1 tsp vanilla extract
1 cup whipped topping (like Cool Whip)
1 cup fresh strawberries, chopped
¼ cup strawberry jam or preserves
½ cup white chocolate chips, melted (optional)
Fresh strawberries for garnish (optional)
Directions
In a bowl, combine graham cracker crumbs and melted butter, mixing until it resembles wet sand.
Press the graham cracker mixture into the bottom of a silicone mold or mini muffin tin, forming the base for your cheesecake bites. Refrigerate for 15-20 minutes to firm.
In another bowl, beat softened cream cheese and powdered sugar until smooth and creamy. Add vanilla extract and whipped topping, mixing until fully combined.
Gently fold in chopped strawberries and strawberry jam or preserves into the cheesecake filling.
Spoon the cheesecake mixture over the graham cracker crust in the mold, pressing gently to fill each cavity.
Refrigerate the bites for at least 2 hours, or until firm.
If desired, drizzle melted white chocolate over the chilled bites just before serving. Garnish with fresh strawberries for a beautiful touch.
