Ingredients
- 4 chicken breasts
- 1 cup mushrooms, finely chopped
- 1/2 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Step-by-step instructions
1. Preheat the oven to 375°F (190°C).
2. In a skillet, heat olive oil over medium heat.
3. Add minced garlic and sauté for 1 minute until fragrant.
4. Add chopped mushrooms and cook until they release moisture and begin to brown, about 5 minutes.
5. Stir in the chopped spinach and cook for an additional 2 minutes until wilted.
6. In a bowl, combine the cooked mushroom mixture with cream cheese and shredded mozzarella cheese. Season with salt and pepper to taste.
7. Use a sharp knife to create a pocket in each chicken breast.
8. Stuff each chicken breast with the mushroom mixture, ensuring they are filled evenly.
