Grilled Mango Chicken Bowl 🍗🥭🍚

Ingredients:
🍗 For the Chicken Marinade:
2 boneless, skinless chicken breasts
2 tbsp olive oil
1 tbsp honey
1 tbsp lime juice
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
🥭 For the Mango Salsa:
1 ripe mango (diced)
½ cup cherry tomatoes (halved)
¼ cup red onion (finely chopped)
1 tbsp lime juice
1 tbsp cilantro (chopped)
½ tsp salt
🍚 For the Bowl:
2 cups cooked jasmine rice
½ cup grilled cherry tomatoes
1 tbsp chopped parsley or cilantro (for garnish)
Instructions:
1️⃣ Marinate the Chicken:
In a bowl, whisk together olive oil, honey, lime juice, and spices.
Coat the chicken in the marinade and let it sit for 30 minutes.
2️⃣ Grill the Chicken & Tomatoes:
Heat a grill pan or outdoor grill to medium-high heat.
Cook chicken for 5-6 minutes per side until fully cooked.
Grill cherry tomatoes until slightly charred.
3️⃣ Make the Mango Salsa:
In a bowl, combine mango, cherry tomatoes, red onion, lime juice, cilantro, and salt.
Toss well and set aside.
4️⃣ Assemble the Bowl:
Place cooked rice in a bowl.
Slice the grilled chicken and lay it on top.
Add the grilled cherry tomatoes & mango salsa.
Garnish with fresh parsley or cilantro.
