🥕 Carrot Cake Zucchini Muffins


 

These moist and flavorful muffins combine the natural sweetness of carrots and zucchini with warm spices for a delicious, healthy treat. Perfect for breakfast, snacks, or even dessert!


🥘 Ingredients:

1 cup grated zucchini (about 1 medium zucchini) 🥒

1 cup grated carrots (about 2 medium carrots) 🥕

2 large eggs 🥚

½ cup vegetable oil or melted coconut oil 🫒🥥

⅔ cup brown sugar (or coconut sugar for a natural option)

1 teaspoon vanilla extract 🌿

1 ½ cups all-purpose flour (or whole wheat for a healthier option)

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon 🌿

½ teaspoon nutmeg (optional)

¼ teaspoon salt 🧂

½ cup chopped walnuts or pecans (optional) 🌰

½ cup raisins or shredded coconut (optional)

🔥 Instructions:

1. Preheat the Oven & Prepare the Pan


Preheat your oven to 350°F (175°C).

Line a muffin tin with paper liners or grease lightly.

2. Prep the Wet Ingredients


In a large bowl, whisk together the eggs, oil, brown sugar, and vanilla extract until smooth.

Stir in the grated zucchini and carrots.

3. Mix the Dry Ingredients


In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg (if using), and salt.

4. Combine Wet & Dry Ingredients


Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.

If using, gently fold in chopped nuts, raisins, or shredded coconut.

5. Bake the Muffins


Divide the batter evenly into the muffin cups, filling each about ¾ full.

Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool & Serve


Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
