 Black Pepper Chicken with Mushrooms 



Ingredients:


- 1 lb (450g) chicken breast, cut into bite-sized pieces

- 1 tablespoon vegetable oil

- 1 cup (150g) mushrooms, sliced

- 1 bell pepper, chopped

- 2 cloves garlic, minced

- 1/4 cup (60ml) low-sodium soy sauce

- 1/2 teaspoon black pepper

- 1 tablespoon corn starch dissolved in 2 tablespoons water

- Cooked rice for serving


Instructions:


1. Heat vegetable oil in a pan over medium-high heat.

2. Add chicken pieces and cook until browned.

3. Stir in mushrooms and bell pepper; sauté until tender.

4. Add minced garlic, soy sauce, and black pepper; mix well.

5. Pour in corn starch mixture; stir until sauce thickens.

6. Serve hot over cooked rice.


Feel free to add any vegetables you love, like broccoli or snap peas, for extra crunch!
