 Beef Barley Soup

 



 Ingredients:

 - 1 lb beef (stew meat or chuck roast)

 - 2 cups carrots (diced)

 - 1 cup celery (diced)

 - 1 cup onions (chopped)

 - 1 can (14.5 oz) tomatoes (diced)

 - 1 cup corn (frozen or canned)

 - 1 cup barley

 - 6 cups beef broth

 - 2 teaspoons salt

 - 1 teaspoon black pepper

 - 1 teaspoon thyme

 


 Directions:

 In a large pot, heat a bit of oil over medium heat. Add the beef and brown it on all sides. Next, add the onions, carrots, and celery, cooking them until they're softened. Stir in the tomatoes, corn, barley, and beef broth. Season the mixture with salt, pepper, and thyme. Bring everything to a boil, then reduce the heat to low and let it simmer for at least an hour, or until the beef is tender. Once it's ready, serve the soup hot.
