Shredded Beef Sandwiches with Caramelized Veggies
Ingredients
For the Shredded Beef:
2 lbs beef chuck roast
2 cups beef broth
1 medium onion, diced
4 garlic cloves, minced
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon black pepper
1 teaspoon salt
For the Veggies:
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 medium onion, thinly sliced
1 medium carrot, julienned
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
For the Sandwiches:
6 hoagie rolls or soft sandwich buns
Optional: shredded cheese, mayonnaise, or mustard
Instructions
1. Cook the Shredded Beef:
Place the beef chuck roast in a slow cooker.
Add beef broth, diced onion, garlic, soy sauce, Worcestershire sauce, smoked paprika, black pepper, and salt.
Cook on low for 8-10 hours or high for 4-5 hours, until the beef is tender and falls apart easily.
Shred the beef with two forks and mix it back into the juices in the slow cooker. Keep warm.
2. Caramelize the Veggies:
Heat olive oil in a large skillet over medium heat.
Add sliced bell peppers, onion, and carrots to the skillet.
Sprinkle with garlic powder, salt, and pepper.
Sauté until the veggies are tender and slightly caramelized, about 8-10 minutes. Remove from heat.
3. Assemble the Sandwiches:
Toast the hoagie rolls lightly, if desired.
Layer the shredded beef onto the rolls, followed by the caramelized veggies.
Add any optional toppings like cheese, mayonnaise, or mustard.
4. Serve and Enjoy:
Serve the sandwiches warm with a side of chips, coleslaw, or a salad. Perfect for a hearty lunch or dinner!
