Melt-in-Your-Mouth Apple Pie Recipe
This apple pie is soft, moist, and utterly delicious—a perfect dessert for any occasion!
Ingredients:
For the Cake:
2 apples (1 cut into small cubes, 1 sliced thinly)
1 tbsp sugar (to toss with apple cubes)
2 eggs
A pinch of salt
8g (1 tsp) vanilla sugar
120g (0.6 cup) sugar
100ml (1/2 cup) vegetable oil
130ml (1/2 cup) warm milk
280g (1.75 cups) flour
16g (2 tsp) baking powder
50g raisins
For Brushing:
1 egg yolk
2 tbsp milk
Optional:
Powdered sugar for dusting
Directions:
1. Prepare the Apples:
Toss the cubed apple pieces with 1 tablespoon of sugar and set aside. Slice the second apple into thin slices for decoration.
2. Make the Batter:
In a large mixing bowl, beat the eggs with a pinch of salt, vanilla sugar, and 120g sugar until the mixture is pale and fluffy.
Gradually add the vegetable oil and warm milk, mixing continuously.
3. Add the Dry Ingredients:
Sift the flour and baking powder together, then add to the wet ingredients in batches, mixing until smooth and lump-free.
4. Incorporate the Apples and Raisins:
Gently fold the sugar-coated apple cubes and raisins into the batter.
5. Prepare the Pan:
Grease a round springform or cake pan (about 9 inches/22 cm) and line the bottom with parchment paper. Pour the batter into the pan and smooth the top.
6. Add the Apple Slices:
Arrange the thin apple slices decoratively on top of the batter.
7. Brush with Egg Wash:
Mix the egg yolk with 2 tablespoons of milk and brush the apple slices and exposed batter surface.
8. Bake:
Preheat your oven to 350°F (180°C). Bake the cake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
9. Cool and Serve:
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar before serving if desired.
Tips:
Serve slightly warm with a scoop of vanilla ice cream or whipped cream for an extra treat.
Store leftovers in an airtight container at room temperature for up to 2 days.
