FRUIT CAKE



INGREDIENTS 


• 250 g of flour 

• 3 eggs 

• 150 g of sugar

• 120 g butter (at room temperature) 

• 150 ml of milk 

• A pinch of salt 🧂

• 10 g of baking powder (1 tbsp)

• 1 tsp vanilla essence 

• Zest of 1 lemon (optional) 

• 200 g of candied fruits (orange, cherries, pineapple...)


INSTRUCTIONS 


● Prepare the oven: Preheat to 180°C (350°F) and grease a 20x20 cm mold. 

● Beat butter + sugar: Mix until you get a soft cream. Add the eggs one by one and the vanilla. 

● Incorporate the dry: Sift the flour, baking powder and salt, add it little by little alternating with the milk.

● Candied fruits: Flour them lightly so they don't sink and mix them gently into the dough. 

● In the mold and in the oven: Pour the mixture, level and bake for 35-40 minutes (until the toothpick comes out clean).
