Crispy Golden Mediterranean Salmon Patties with Spinach and Feta
Ingredients:
1 lb fresh salmon fillets, skin removed and finely chopped
1/2 cup cooked spinach, squeezed dry and chopped
1/4 cup crumbled feta cheese
1/4 cup breadcrumbs
1 egg, beaten
1 tablespoon fresh dill, chopped
1 tablespoon lemon zest
1/2 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons olive oil (for frying)
Fresh herbs for garnish (optional)
Directions:
In a large mixing bowl, combine the chopped salmon, cooked spinach, feta cheese, breadcrumbs, beaten egg, dill, lemon zest, garlic powder, salt, and pepper. Mix until everything is well combined.
Form the mixture into small patties, about 2-3 inches in diameter.
Heat the olive oil in a large skillet over medium heat. Once hot, gently place the patties in the skillet.
Cook the patties for about 3-4 minutes on each side, or until golden brown and crispy, flipping carefully.
Remove the patties from the skillet and set them on a paper towel-lined plate to drain excess oil.
Serve warm, garnished with fresh herbs. Optionally, pair with a light salad or your favorite dipping sauce.
