Here's a Crispy Chicken Tandoori recipe that gives you the smoky, juicy, and crispy flavors of a classic tandoor, easily achievable at home:
Ingredients
For the Chicken:
1.5 lbs (700g) chicken (drumsticks, thighs, or whole chicken pieces with skin removed)
2 tbsp lemon juice
1 tsp salt
1 tsp red chili powder
Tandoori Marinade:
1 cup plain yogurt (thick, strained if possible)
1 tbsp ginger paste
1 tbsp garlic paste
1.5 tsp red chili powder (adjust for spice level)
1 tsp turmeric powder
2 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
1/2 tsp ground black pepper
1 tbsp tandoori masala (optional, for extra flavor)
2 tbsp mustard oil (or regular oil)
1 tbsp lemon juice
Salt to taste
A pinch of orange or red food coloring (optional, for the classic tandoori color)
For Garnish:
Fresh cilantro leaves, chopped
Lemon wedges
Thinly sliced onions
Instructions
Step 1: Prep the Chicken
Wash the chicken and pat it dry with a paper towel.
Make deep cuts/slits on each piece so the marinade can penetrate.
Rub the chicken with salt, chili powder, and lemon juice. Set aside for 15-20 minutes.
Step 2: Prepare the Marinade
In a bowl, mix yogurt, ginger paste, garlic paste, chili powder, turmeric, coriander powder, cumin powder, garam masala, black pepper, tandoori masala (if using), mustard oil, lemon juice, and food coloring (optional).
Taste the marinade and adjust salt or spice as needed.
Step 3: Marinate the Chicken
Coat the chicken pieces thoroughly with the prepared marinade, ensuring the slits are filled.
Cover and refrigerate for at least 4 hours, preferably overnight, for maximum flavor.
Step 4: Cook the Chicken
Option 1: Oven (For Crispy Skin)
Preheat your oven to 400°F (200°C). Line a baking tray with foil and place a wire rack on top.
Arrange the marinated chicken on the rack. Brush with a little oil or butter.
Bake for 20 minutes, then flip the chicken and brush with more oil.
Bake for another 15-20 minutes until the chicken is cooked through and slightly charred.
For extra crispiness, broil on high for 2-3 minutes, keeping a close eye to avoid burning.
Option 2: Grill (For Smoky Flavor)
Preheat the grill to medium-high heat. Grease the grates lightly.
Place the chicken on the grill and cook for 6-8 minutes on each side or until fully cooked. Brush with oil occasionally for crispiness and char marks.
Option 3: Stovetop (If No Oven or Grill)
Heat a heavy-bottomed pan or grill pan on medium heat and brush with oil.
Place the chicken pieces on the pan and cover with a lid.
Cook for 6-8 minutes per side until the chicken is charred, crispy, and cooked through.
Step 5: Garnish and Serve
Transfer the crispy tandoori chicken to a serving plate.
Garnish with chopped cilantro, lemon wedges, and onion slices.
Serve hot with mint chutney, yogurt dip, or naan.
Enjoy your homemade, crispy, and flavorful Chicken Tandoori! 🍗🔥
