 Chicken-Stuffed Potatoes 



A hearty and delicious dish featuring baked potatoes filled with a creamy chicken mixture, perfect for a comforting meal or snack.


Ingredients:

4 large potatoes 

1 tablespoon olive oil 

1 cup cooked chicken, shredded 

1/2 cup grated mozzarella or cheddar cheese 

1/4 cup sour cream or plain Greek yogurt 

1/4 cup cooked vegetables (like peas, carrots, or corn) 

1/4 cup green onions, finely sliced 

2 cloves garlic, minced 

Salt and black pepper to taste 

Paprika or chili flakes for garnish (optional) 

Directions:


Bake the Potatoes:


Preheat your oven to 400°F (200°C).

Wash and scrub the potatoes, then pierce them a few times with a fork. Rub them with olive oil and a sprinkle of salt.

Place the potatoes on a baking tray and bake for 50–60 minutes, or until tender when pierced with a knife.

Prepare the Filling:


While the potatoes bake, mix the shredded chicken, grated cheese, sour cream, cooked vegetables, green onions, and minced garlic in a bowl. Season with salt and pepper to taste.

Stuff the Potatoes:


Once the potatoes are baked, let them cool slightly. Cut a slit along the top of each potato and gently scoop out some of the flesh, leaving a sturdy shell.

Mash the scooped-out potato and mix it into the chicken filling.

Bake Again:


Spoon the filling back into the potato shells, mounding it slightly. Sprinkle with additional cheese on top if desired.

Return the stuffed potatoes to the oven and bake for another 10–15 minutes, or until the tops are golden and bubbly.

Serve:


Garnish with paprika, chili flakes, or more green onions. Serve warm with a side salad or steamed vegetables.

Pro Tips:


For extra flavor, mix in a spoonful of Dijon mustard or a pinch of smoked paprika into the filling.

Use leftover rotisserie chicken for convenience.

Experiment with different cheeses like Parmesan or Gruyère for a unique twist.
