I Love this Cheddar Broccoli Soup 💗
So creamy and easy to make, perfect for chilly January. Better than restaurant take out!
Ingredients:
3 tbsp butter
1 onion diced
1/4 cup flour
2 cups heavy cream
2 cups chicken broth
3 cups broccoli sliced (1 crown broccoli)
1 cup carrots julienne
2 cups shredded cheddar cheese
Salt and pepper to taste
Easy steps:
In a large pan or pot, add butter and let it melts. Then, saute diced onion. Sauté till tender and translucent. Add the flour and mix till browned for about a minute. Then, add chicken broth, heavy cream. Let it boils. Then, add broccoli and carrots. Simmer for 1-2 minutes. Then, add the shredded cheddar cheese. Mix well till cheese is melted. Season with salt and pepper. Serve warm. Enjoy!
