Ingredients:

For the Chicken:

- 4 boneless, skinless chicken breasts (or thighs)

- 2 tablespoons olive oil

- 1 tablespoon Cajun seasoning

- 1 teaspoon smoked paprika

- ½ teaspoon garlic powder

- ½ teaspoon onion powder

- ½ teaspoon salt

- ¼ teaspoon black pepper

- 1 teaspoon lemon juice

For the Alabama White Sauce:

- ¼ cup apple cider vinegar

- 1 tablespoon prepared horseradish

- 1 teaspoon honey

- ½ teaspoon garlic powder

- ½ teaspoon onion powder

- ½ teaspoon black pepper

- Salt to taste

- 1–2 tablespoons water (to thin, if needed)

---

Instructions:

1. Prepare the Chicken:

   - In a small bowl, mix Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper.

   - Rub the chicken breasts with olive oil and coat evenly with the seasoning mix.

   - Drizzle with lemon juice and let marinate for 20–30 minutes at room temperature.

2. Make the Alabama White Sauce:

   - In a medium bowl, whisk together mayonnaise, apple cider vinegar, horseradish, Dijon mustard, honey, garlic powder, onion powder, black pepper, and a pinch of salt.

   - Adjust the consistency by adding water, 1 tablespoon at a time, until it reaches a pourable thickness.

   - Refrigerate until ready to serve (can be made ahead for better flavor).

3. Grill the Chicken:

   - Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.

   - Grill the chicken for 5–7 minutes per side, or until the internal temperature reaches 165°F (74°C).

   - Let the chicken rest for 5 minutes before slicing.

4. Serve:

   - Drizzle the Alabama white sauce generously over the grilled chicken or serve it on the side for dipping.

   - Garnish with fresh parsley or chives, if desired.
