Ingredients:


2 cups cooked, shredded chicken (rotisserie chicken works great)

8 oz cream cheese, softened

1/2 cup shredded sharp cheddar cheese

1/2 cup ranch dressing (or blue cheese dressing, if preferred)

1/4 cup buffalo sauce (adjust to your preferred spice level)

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 cup finely chopped green onions (optional)

1/2 cup breadcrumbs (for coating)

Fresh parsley, chopped (optional, for garnish)

Preparation:


Make the Cheese Mixture: In a large bowl, combine the shredded chicken, cream cheese, cheddar cheese, ranch dressing, buffalo sauce, garlic powder, and onion powder. Mix everything together until smooth and well combined.


Form the Balls: Once the mixture is fully blended, use your hands to shape the mixture into bite-sized balls (about 1 inch in diameter).


Coat the Cheese Balls: Roll each chicken ball in breadcrumbs until coated evenly. For extra flavor, you can also add finely chopped green onions to the breadcrumbs before rolling.


Chill: Place the formed cheese balls on a baking sheet or platter and refrigerate for at least 1 hour to allow them to firm up.


Serve: Once chilled, garnish with chopped fresh parsley if desired. Serve with extra buffalo sauce or ranch dressing for dipping.
