Garlic & Herb Turkey Roulade
Ingredients
1 (3-4 lb) boneless, skinless turkey breast
3 tbsp olive oil, divided
3 garlic cloves, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
1 tsp lemon zest
1 tsp salt
1/2 tsp black pepper
Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Butterfly the turkey breast, pounding it to an even thickness if necessary.
In a small bowl, mix 2 tbsp olive oil, garlic, rosemary, thyme, parsley, lemon zest, salt, and pepper to form a paste.
Spread the herb mixture evenly over the turkey breast.
Roll the turkey tightly into a log, securing it with kitchen twine.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear the roulade on all sides until golden brown, about 6 minutes.
Transfer the roulade to the prepared baking sheet. Roast for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
Rest for 10 minutes before slicing. Serve with mashed potatoes and cranberry sauce for a festive meal!
