I made pannbiffar (beef patties) that have feta cheese inside, roasted garlic and rosemary potatoes and mushroom sauce.
Recipe for pannbiffar:
- 500 gr of minced meat (you can use beef or mixed mince)
- 1 small/medium onion
- 3 spoonfuls of breadcrumbs
- 1 spoonful of full fat milk
- 1 spoonful of soya sauce
- 1 teaspoon of mustard
- 1 egg
- Feta cheese
- Salt, pepper to taste
- Oil and butter
1. Chop the onion finely and then sauté it until it becomes golden. Let cool.
2. In a bowl, mix: breadcrumbs, milk, mustard and soy sauce and egg. Let rest 10 minutes.
3. Cut feta cheese into small cubes (1-2cm)
4. Add minced meat, minced garlic and onion. Salt and pepper as well. Mix well. I usually knead the mixture for a couple of minutes.
5. Take small balls of meat mixture and put a feta cheese cube in the middle. Form the patty with your hands to cover the cheese.
6. Put a bit of butter and a bit of oil in the pan, and fry the patties. They should not be floating in oil, just so they could get a nice crust.
Recipe for the roasted potatoes:
- Potatoes (how much you like)
- Olive oil
- Garlic
- Rosemary
- Salt
1. Preheat the oven to 220 degrees.
2. Peel the potatoes and boil them for 10-15 minutes (depending on their size)
3. Put them in a bowl and drizzle plenty of olive oil on them. Add salt and rosemary. I recommend using vegeta instead of salt, it adds a nice flavor.
4. Preheat the form they will be baking in.
5. Add the potatoes to the form and bake for 45 minutes to an hour (depending on how good your oven is, but keep an eye on them). Flip them halfway through.
6. Add the garlic when the potatoes are done.
Mushroom sauce:
- 250g of mushrooms (I used button mushrooms)
- 50g leek
- 1 dl of vegetable stock
- 2dl of heavy cream
- A little bit of white wine
- A teaspoon of soy sauce
- Thyme and salt
- Cornstarch
1. Sauté chopped mushrooms and leek until they get a nice color, add wine halfway through
2. Add the stock and soy sauce
3. Make it into a sauce using food processor
4. Put it back in a pan and add heavy cream, salt and thyme
5. If it needs to be thicker, mix a spoonful of cornstarch in a little bit of cold water and then add it to the sauce.
I used lingonberry jam I made earlier this autumn (just lingon berries and sugar) and parsley to decorate the plate. I also put a bit of feta cheese I had left in between the patties.
