Roast beef

 Here’s a simple and classic roast beef recipe:





### Ingredients:

- 1 (3-4 lbs) beef roast (ribeye, sirloin, or top round)

- 2 tbsp olive oil

- 2 tsp salt

- 1 tsp black pepper

- 3 garlic cloves, minced

- 1 tsp dried rosemary

- 1 tsp dried thyme

- 1 cup beef broth (optional, for gravy)


### Instructions:


1. **Prepare the Beef:**

   - Take the roast out of the refrigerator about 30-60 minutes before cooking to bring it to room temperature. 

   - Preheat your oven to 450°F (230°C).


2. **Season the Beef:**

   - Rub the roast with olive oil, salt, black pepper, garlic, rosemary, and thyme. Ensure the seasoning covers all sides.


3. **Sear the Beef (Optional):**

   - Heat a skillet over medium-high heat. Sear the roast on all sides for 2-3 minutes to lock in the flavors.


4. **Roast the Beef:**

   - Place the beef on a rack in a roasting pan (or directly in the pan if you don’t have a rack).

   - Roast in the preheated oven for 15 minutes at 450°F (230°C) to create a crust.

   - Lower the oven temperature to 325°F (165°C) and continue roasting until your desired doneness:

     - **Rare:** 120°F (49°C) (about 20-25 minutes per pound)

     - **Medium-Rare:** 130°F (54°C)

     - **Medium:** 140°F (60°C)


5. **Rest the Roast:**

   - Remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for 15-20 minutes to retain juices.


6. **Optional Gravy:**

   - While the roast rests, pour the drippings from the pan into a saucepan.

   - Add beef broth and simmer, scraping up any browned bits. Thicken with a slurry of cornstarch and water if desired.


7. **Serve:**

   - Slice the roast against the grain and serve with your favorite sides (mashed potatoes, roasted vegetables, or a green salad).
