Ingredients:
For the Cheesecake Domes:
8 ounces cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon peppermint extract
½ cup heavy cream, whipped
For the Pomegranate Glaze:
½ cup pomegranate juice
2 tablespoons sugar
1 teaspoon cornstarch, dissolved in 1 tablespoon water
For the Base:
1 cup graham cracker crumbs or crushed digestive biscuits
3 tablespoons melted butter
1 tablespoon sugar
For Garnish:
½ cup pomegranate arils
Fresh mint leaves
Edible glitter (optional)
Instructions:
Prepare the Base:
Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture into the bottoms of silicone dome molds or ramekins to form a firm base. Chill for 15 minutes.
Make the Cheesecake Filling:
In a bowl, beat cream cheese, powdered sugar, vanilla, and peppermint extract until smooth. Fold in the whipped cream gently to maintain a light texture.
Assemble the Domes:
Spoon the cheesecake mixture into the molds over the prepared base, smoothing the tops. Chill in the refrigerator for at least 4 hours or until set.
Prepare the Pomegranate Glaze:
In a small saucepan, combine pomegranate juice and sugar. Bring to a simmer and stir in the dissolved cornstarch. Cook until the mixture thickens to a glossy glaze. Let cool to room temperature.
Unmold and Glaze:
Carefully remove the cheesecake domes from the molds. Spoon or brush the pomegranate glaze over the tops.
Garnish and Serve:
