Pistachio Snowball Cookies

 🍪 Pistachio Snowball Cookies



Ingredients:

- 1 cup unsalted butter, softened

- 1 cup powdered sugar plus more for dusting

- 1 tsp vanilla extract

- 2 cups all-purpose flour

- 1 cup pistachios, finely chopped

- 1/4 tsp salt


Steps:

1️⃣ Preheat the oven to 350°F (175°C).


2️⃣ In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.


3️⃣ Add in the vanilla extract and stir the mixture.


4️⃣ Gently fold in the all-purpose flour, the salt and finely chopped pistachios, mixing until just incorporated.


5️⃣ Roll the mixture into small bite-sized spheres and place them on an ungreased baking sheet, leaving space between each ball.


6️⃣ Transfer the baking sheet to the preheated oven and put in the oven and bake for about 15-20 minutes until they are lightly golden.


7️⃣ Once baked, allow them to sit and cool on the tray for a short period.


8️⃣ While still warm, coat each cookie generously in powdered sugar before transferring them.


9️⃣ Allow them to cool fully on a wire rack before enjoying.
