No-Bake Oreo Peppermint Cheesecake Bites

 


Ingredients

20 Oreo cookies, crushed (reserve a few for topping)

4 tbsp unsalted butter, melted

8 oz cream cheese, softened

½ cup powdered sugar

½ tsp peppermint extract

½ cup whipped topping (or whipped cream)

½ cup crushed peppermint candies (or candy canes)

Optional: White chocolate, for drizzling

Instructions

Prepare the crust: In a bowl, mix the crushed Oreo cookies (minus the reserved amount) with melted butter until well combined. Press a spoonful of the mixture into the bottoms of mini cupcake liners or silicone molds to form the crust.

Make the filling: In a medium bowl, beat the cream cheese until smooth. Add powdered sugar and peppermint extract, and mix until creamy.

Fold in whipped topping: Gently fold in the whipped topping and crushed peppermint candies until evenly combined.

Assemble the bites: Spoon the cream cheese mixture over each Oreo crust, filling to the top.

Add toppings: Sprinkle reserved crushed Oreos and extra crushed peppermint on top. If desired, drizzle with melted white chocolate.

Chill: Refrigerate for at least 2 hours or until the bites are firm.
