 Grilled Beef Tenderloin Crostini with Béarnaise Sauce



Ingredients:


1 lb beef tenderloin (trimmed and cut into small 1-inch pieces)

1 tablespoon olive oil

Salt and black pepper to taste

12 slices baguette, about 1/2 inch thick

1/4 cup unsalted butter, melted

Fresh parsley, chopped for garnish

For the Béarnaise Sauce:


1/2 cup white wine vinegar

1/4 cup dry white wine

2 tablespoons shallots, finely minced

1 tablespoon fresh tarragon, chopped (plus extra for garnish)

3 large egg yolks

1/2 cup unsalted butter, melted

Salt and pepper to taste

Directions:


Prepare the Beef Tenderloin:


Preheat your grill or grill pan over medium-high heat. Season the beef tenderloin pieces with olive oil, salt, and black pepper.

Grill the beef tenderloin for about 3-4 minutes per side, or until it reaches your desired level of doneness. Remove from heat and set aside.

Make the Béarnaise Sauce:


In a small saucepan, combine the white wine vinegar, white wine, shallots, and tarragon. Simmer over medium heat for about 5-6 minutes, until the mixture reduces by half. Remove from heat and allow to cool slightly.

In a heatproof bowl, whisk the egg yolks. Gradually add the reduced vinegar mixture to the yolks, whisking constantly. Place the bowl over a double boiler (a heatproof bowl over simmering water) and whisk continuously until the mixture thickens.

Slowly drizzle in the melted butter, whisking constantly until the sauce is smooth and emulsified. Season with salt and pepper, and add extra tarragon to taste.

Prepare the Crostini:


Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with melted butter.

Arrange the slices on a baking sheet and bake for 8-10 minutes, or until golden and crisp.

Assemble the Crostini:


Place a slice of grilled beef tenderloin on each crostini.

Spoon a generous amount of Béarnaise sauce over the beef, and garnish with freshly chopped parsley and tarragon.

Serve: Arrange the crostini on a platter and serve immediately as an appetizer or party dish.
