🍋 Easy Lemon Blueberry Trifle 🫐
🍽️ This refreshing, layered trifle combines zesty lemon, rich cheesecake filling, and juicy blueberries. Perfect for any occasion!
Ingredients:
For Lemon Filling:
16 oz cream cheese, softened 🧀
1 1/2 tsp vanilla extract 🍦
1 tbsp limoncello 🍋
Zest from 2 lemons 🍋
1/2 cup lemon curd 🍯
1 1/2 cups confectioner's sugar 🍬
2 cups heavy cream, chilled 🥛
Fillings:
6 cups blueberries 🫐
1/2 cup blueberry preserves 🫙
1/3 cup limoncello, for soaking cake 🍋
Fresh mint leaves and lemon slices, for garnish 🌿🍋
1 recipe Lemon Pound Cake (or use store-bought cake or angel food cake) 🍰
1 recipe Homemade Lemon Curd (or store-bought) 🍯
Instructions:
1️⃣ Prepare the Lemon Cake: Make or buy a lemon pound cake and bake as directed. Once cooled, slice it into small cubes. Store in an airtight container if not using immediately.
2️⃣ Make the Lemon Curd: Prepare lemon curd, allowing it to cool before use.
3️⃣ Create the Lemon Filling: In a large bowl, mix cream cheese, vanilla, limoncello, and lemon zest until smooth. Add 1/2 cup lemon curd and powdered sugar, blending until combined. Gradually whisk in the chilled heavy cream, beating until stiff peaks form. Refrigerate until ready to assemble.
4️⃣ Assemble the Trifle:
Begin with a layer of cake cubes in a trifle bowl, pressing them down gently.
Lightly brush limoncello over the cake pieces.
Add a layer of blueberry preserves, followed by 1/2 cup lemon curd and a layer of blueberries.
Spread a generous layer of lemon cheesecake filling over the blueberries.
5️⃣ Repeat Layers: Repeat layering until the trifle bowl is full. Top with extra blueberries, lemon filling, mint leaves, and lemon slices if desired.
