 Creamy Parmesan Italian Sausage Soup 🍲🧄



Ingredients:


1 lb Italian sausage (use chicken or turkey sausage if preferred)

1 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

3 cups baby spinach, roughly chopped

3 medium potatoes, diced

1 cup heavy cream

1 cup Parmesan cheese, grated

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions:


In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove and set aside.

In the same pot, sauté onion and garlic until softened.

Add chicken broth and potatoes to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.

Stir in spinach, cooked sausage, heavy cream, and Parmesan cheese. Simmer until the cheese melts and soup is creamy.

Season with salt and pepper, garnish with parsley, and serve hot.

Notes:


Substitute potatoes with cauliflower for a low-carb option.
