 Cranberry Pistachio Cheese Ball



Ingredients:


8 oz cream cheese, softened

8 oz sharp cheddar cheese, shredded

1/2 cup crumbled blue cheese (optional for a tangy kick)

1/2 cup dried cranberries, chopped

1/4 cup pistachios, chopped (plus extra for rolling)

2 tablespoons fresh parsley, chopped

1 tablespoon honey

1 teaspoon Dijon mustard

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Directions:


In a large bowl, combine the cream cheese, sharp cheddar, and blue cheese (if using). Use a hand mixer or stand mixer to blend the cheeses together until smooth and creamy.

Add the chopped cranberries, pistachios, parsley, honey, Dijon mustard, garlic powder, and onion powder. Stir with a spatula until everything is well combined.

Season with salt and pepper to taste.

Shape the mixture into a ball using your hands or a spoon. If the mixture is too sticky, chill it in the refrigerator for 30 minutes to firm it up.

Roll the cheese ball in the remaining chopped pistachios to coat the outside evenly.

Wrap the cheese ball tightly in plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

Before serving, remove the cheese ball from the fridge and let it sit at room temperature for about 15 minutes for easier spreading. Serve with crackers, sliced baguette, or fresh veggies.
