Cinnamon Toasty Cheesecake 🍪🍰

 



Ingredients:

For the Crust:


2 cups Cinnamon Toast Crunch cereal, crushed

1/4 cup sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:


3 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1/2 cup sour cream

1/4 cup heavy cream

1/2 teaspoon ground cinnamon

1/2 cup Cinnamon Toast Crunch cereal (for mixing into the cheesecake)

For the Cinnamon Glaze:


1/4 cup powdered sugar

1 tablespoon milk

1/2 teaspoon ground cinnamon

1/4 teaspoon vanilla extract

For the Topping:


1/2 cup Cinnamon Toast Crunch cereal (for garnish)

Additional cinnamon glaze for drizzling

Directions:

Prepare the Crust:


Preheat the oven to 325°F (165°C).

In a bowl, combine the crushed Cinnamon Toast Crunch cereal, sugar, and melted butter. Mix until well combined.

Press the mixture into the bottom of a springform pan to form a crust.

Bake for 8-10 minutes, then remove and set aside to cool.

Prepare the Cheesecake Filling:


In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy.

Add vanilla extract, eggs one at a time, sour cream, heavy cream, and ground cinnamon. Mix until fully combined.

Stir in the crushed Cinnamon Toast Crunch cereal, making sure it's evenly distributed throughout the cheesecake mixture.

Pour the cheesecake mixture over the cooled crust in the springform pan.

Bake the Cheesecake:


Bake for 50-60 minutes or until the cheesecake is set, but still slightly jiggly in the center.

Turn off the oven and let the cheesecake cool for 1 hour with the oven door cracked open. Then refrigerate for at least 4 hours or overnight to allow the cheesecake to fully set.

Make the Cinnamon Glaze:


In a small bowl, whisk together the powdered sugar, milk, cinnamon, and vanilla extract to form a smooth glaze.

Drizzle the glaze over the top of the chilled cheesecake.

Top the Cheesecake:


Once the cheesecake has set, garnish with additional Cinnamon Toast Crunch cereal and drizzle with more cinnamon glaze for added sweetness and crunch.

Serve:
