Ingredients:
For the Cookies:
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup chocolate chips
1/2 cup pecans, chopped (optional)
For the Cinnamon Sugar Coating:
1/4 cup granulated sugar
1 teaspoon cinnamon
Directions:
Prepare the Dough:
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips and chopped pecans (if using).
Chill the Dough:
Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This helps to prevent the cookies from spreading too much while baking.
Prepare the Cinnamon Sugar Coating:
In a small bowl, mix together the granulated sugar and cinnamon for the coating.
Shape and Coat the Cookies:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop out tablespoon-sized portions of dough and roll them into balls.
Roll each ball in the cinnamon sugar mixture until fully coated, then place them on the prepared baking sheet about 2 inches apart.
Bake the Cookies:
Bake in the preheated oven for 10-12 minutes or until the edges are golden and the centers are set. They may look slightly underbaked but will firm up as they cool.
Cool and Serve:
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
