Blueberry Cream Cheese Puff Pastries Recipe 🫐🥐

Ingredients:
Blueberry Filling:
18 oz container fresh blueberries
1/3 cup sugar
1 tsp lemon juice
7 tbsp water, divided
3 tbsp cornstarch
Cream Cheese Filling:
8 oz cream cheese, room temperature
1/3 cup sugar
1 tsp lemon juice
1 tsp vanilla extract
Puff Pastry:
2 boxes of puff pastry shells (follow package instructions for baking)
Instructions:
1. Prepare the Blueberry Filling:
In a small saucepan, add blueberries, sugar, lemon juice, and 3 tablespoons of water. Stir and heat over medium-low heat, bringing the mixture to a gentle boil. Boil for about 4-5 minutes, stirring occasionally.
In a separate bowl, mix the remaining 4 tablespoons of water with the cornstarch until smooth. Pour this mixture into the blueberry saucepan and stir until the filling thickens.
Remove from heat and let it cool.
2. Make the Cream Cheese Filling:
In a mixing bowl, beat the cream cheese until smooth and creamy.
Add sugar, lemon juice, and vanilla extract to the cream cheese. Mix until well combined and smooth.
3. Prepare the Puff Pastry Shells:
Bake puff pastry shells according to package instructions. Once baked, carefully remove the "top" of each pastry to create a hollow space for filling.
4. Assemble the Pastries:
Place a spoonful of the cream cheese filling in the center of each pastry shell.
Top the cream cheese filling with a spoonful of the blueberry mixture, followed by a small dab of the cream cheese mixture if desired.
Garnish with a few fresh blueberries on top for extra flavor and presentation.
