 Tropical Pineapple Chicken Rice Bowl



 Ingredients:


1 pound boneless, skinless chicken thighs, diced

1 cup pineapple chunks (fresh or canned)

1 1/2 cups cooked jasmine rice

1 bell pepper, diced

1/2 cup red onion, chopped

3 cloves garlic, minced

1/4 cup soy sauce

2 tablespoons honey or brown sugar

1 tablespoon sesame oil (optional)

Salt and pepper, to taste

Fresh cilantro or green onions for garnish

Directions:


Cook the Chicken: In a large skillet, heat sesame oil (or olive oil) over medium-high heat. Season chicken with salt and pepper. Add chicken to the skillet and cook for 5-7 minutes until browned and cooked through.


Add Vegetables: Stir in the onion, bell pepper, and garlic. Sauté for about 3-4 minutes until the vegetables soften.


Incorporate Pineapple: Add the pineapple chunks, soy sauce, and honey. Stir to combine and simmer for another 2-3 minutes, allowing the sauce to thicken slightly.


Mix in Rice: Add the cooked rice to the skillet, mixing everything until well combined and heated through.
