Sri Lankan Chicken Curry
Ingredients:
1 pound chicken thighs, cut into pieces
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon grated ginger
1 tablespoon Sri Lankan curry powder (or substitute with Indian curry powder)
1 can (14 oz) coconut milk
1 cinnamon stick
2 green cardamom pods
1 tablespoon lime juice
Fresh curry leaves (optional)
Fresh cilantro, for garnish
Cooked rice, for serving
Instructions:
Heat oil in a pan, sauté onions, garlic, and ginger until soft.
Add curry powder, cinnamon stick, and cardamom pods, stirring until fragrant.
Add chicken and brown on all sides. Stir in coconut milk and curry leaves.
Simmer for 30 minutes until chicken is tender. Stir in lime juice.
Serve with rice, garnished with cilantro.
