Greek Meatballs and Orzo Skillet with Garlic Parmesan Cream Sauce 🍋🍝
Ingredients 🛒
For the Meatballs:
1 lb ground chicken or turkey
1/3 cup breadcrumbs
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
1 egg
Zest of 1 lemon
Salt and pepper, to taste
For the Skillet:
1 tbsp olive oil
1 red bell pepper, chopped
1 cup Kalamata olives
1 cup orzo pasta
2 cups chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp garlic powder
Fresh parsley and crumbled feta cheese, for garnish

Prepare the Meatballs: In a large bowl, combine ground meat, breadcrumbs, parsley, garlic, egg, lemon zest, salt, and pepper. Mix well and form into small meatballs.
Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Add meatballs and cook until golden brown on all sides and cooked through, about 6-8 minutes. Remove meatballs from skillet and set aside.
Cook the Veggies and Orzo: In the same skillet, add red bell pepper and cook for 2-3 minutes until slightly softened. Add orzo and cook, stirring for 1-2 minutes, to lightly toast.
Make the Creamy Sauce: Pour in chicken broth and bring to a simmer. Cook orzo for about 8-10 minutes, stirring occasionally, until al dente and most of the liquid is absorbed. Stir in heavy cream, Parmesan cheese, and garlic powder.
Combine: Add meatballs back to the skillet, along with Kalamata olives. Stir to coat everything in the creamy sauce. Adjust seasoning with salt and pepper as needed.
Garnish and Serve: Top with fresh parsley, crumbled feta, and an extra sprinkle of Parmesan. Serve hot and enjoy!
