Greek Lemon Chicken and Potatoes 🍋🍗
Ingredients:
4 bone-in, skin-on chicken thighs
1 ½ lbs potatoes, peeled and cut into wedges
¼ cup olive oil
4 cloves garlic, minced
Juice of 2 lemons
1 tbsp dried oregano
1 tsp dried thyme
1 tsp paprika
Salt and pepper, to taste
½ cup chicken broth
Fresh parsley, chopped (for garnish)
Instructions:
1️⃣ Preheat the oven to 400°F (200°C). Place chicken thighs and potatoes in a baking dish.
2️⃣ In a bowl, whisk together olive oil, garlic, lemon juice, oregano, thyme, paprika, salt, and pepper.
3️⃣ Pour the marinade over the chicken and potatoes, tossing to coat evenly.
4️⃣ Pour the chicken broth into the dish and bake for 45-50 minutes, until the chicken is golden and the potatoes are tender.
5️⃣ Garnish with fresh parsley before serving.
Notes:
For a crispy finish, broil the chicken for 2-3 minutes at the end!
