Fried Cornbread – Southern Cornmeal Hoecakes
Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup buttermilk
1 large egg
2 tablespoons melted butter or vegetable oil
Additional vegetable oil (for frying)
Directions
In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
In another bowl, whisk together buttermilk, egg, and melted butter or vegetable oil.
Pour the wet ingredients into the dry ingredients, stirring until just combined. Let the batter sit for 5 minutes.
Heat a skillet over medium heat, adding vegetable oil to coat the bottom.
Spoon 1/4 cup of batter onto the hot skillet, spreading it into a round shape. Cook for 2-3 minutes per side, until golden brown. Drain on paper towels.
Enjoy warm with butter, honey, or as a side to your favorite Southern dishes.
