Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
2 cups cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1/2 cup sour cream
1/4 cup caramel sauce
1 cup mini Rolo candies, chopped
Additional mini Rolo candies for garnish
Directions:
Preheat your oven to 325°F (163°C) and line a muffin tin with cupcake liners.
In a bowl, combine the graham cracker crumbs and melted butter. Press a spoonful of the mixture into the bottom of each cupcake liner to form the crust.
In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
Mix in the sour cream and caramel sauce until fully incorporated.
Fold in the chopped mini Rolo candies.
Divide the cheesecake batter evenly among the cupcake liners, filling each about 3/4 full.
Bake for 18-20 minutes, or until the centers are set.
Allow the cheesecakes to cool completely, then refrigerate for at least 2 hours before serving.
Garnish with additional mini Rolo candies and a drizzle of caramel sauce.
