- 6 oz dark chocolate, chopped

- 2 tbsp water
- 6 oz milk chocolate, chopped
- 1 cup heavy cream
- 2 egg yolks
- 2 tbsp sugar
🍫 For the White Chocolate Mousse:
- 2 tbsp butter
- 2 tbsp water
- 6 oz white chocolate, chopped
- 1 cup heavy cream
- 2 egg yolks
- 2 tbsp sugar
Directions
1. Prepare the Crust:
Preheat your oven to 350°F (175°C). In a bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press this mixture firmly into the bottom of a springform pan. Bake for 10 minutes and allow to cool completely.
2. Make the Dark Chocolate Mousse:
Using a double boiler, melt together the dark chocolate, butter, and water until smooth. Allow this mixture to cool slightly. In a separate bowl, whip the heavy cream until stiff peaks form. In another bowl, beat the egg yolks and sugar until pale and thick. Fold the melted chocolate mixture into the egg yolk mixture, then gently fold in the whipped cream. Spread this mousse over the cooled crust and refrigerate for at least 30 minutes.
3. Prepare the Milk Chocolate Mousse:
Repeat the same melting process with the milk chocolate, butter, and water. Whip the heavy cream, beat the egg yolks with sugar, and fold the chocolate mixture into the egg yolks, followed by the whipped cream. Carefully spread this layer over the dark chocolate mousse and refrigerate for at least 30 minutes.
4. Create the White Chocolate Mousse:
Follow the same steps as above, using white chocolate this time. Melt the white chocolate, butter, and water. Whip the heavy cream, beat the egg yolks with sugar, then combine. Spread this mousse over the milk chocolate layer and refrigerate for at least 30 minutes.
5. Final Steps:
Once all layers are set, run a knife around the edge of the pan to loosen. Carefully remove the springform. Serve the torte chilled and enjoy!
