 Creamy Parmesan Garlic Gnocchi with Spinach and Roasted Cherry Tomatoes



Ingredients 🛒


1 lb gnocchi (store-bought or homemade)

2 tbsp olive oil

1 cup cherry tomatoes, halved

3 cups fresh spinach

4 garlic cloves, minced

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper, to taste

1 tbsp butter

Freshly ground black pepper (for garnish)

Roast the Cherry Tomatoes: Preheat the oven to 400°F (200°C). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15 minutes until tender and slightly caramelized.

Cook the Gnocchi: Meanwhile, bring a pot of salted water to a boil and cook the gnocchi according to package instructions. Drain and set aside.

Sauté the Spinach: In a large skillet, heat 1 tbsp olive oil and butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in the spinach and cook until wilted, about 2-3 minutes.

Make the Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

Combine: Add the cooked gnocchi to the skillet, tossing to coat in the creamy garlic sauce. Stir in the roasted cherry tomatoes.

Serve: Garnish with freshly ground black pepper and extra Parmesan if desired. Serve immediately.
