Creamy Garlic Sauce Baby Potatoes
These baby potatoes are smothered in a creamy garlic sauce that’s so good, you’ll want to dip everything in it! Comfort food at its finest!
Ingredients:
Roasted Baby Potatoes:
1 ½ pounds baby potatoes, halved
2 tbsp olive oil
Salt and pepper to taste
1 tsp dried oregano
Creamy Garlic Sauce:
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Roast the baby potatoes:
Preheat your oven to 400°F (200°C). Toss the halved baby potatoes with olive oil, salt, pepper, and oregano. Spread them on a baking sheet and roast for 25-30 minutes, or until golden brown and crispy.
Prepare the creamy garlic sauce:
In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Stir in the heavy cream and bring it to a gentle simmer. Whisk in the Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste.
Combine and serve:
Once the potatoes are done roasting, transfer them to a serving bowl. Pour the creamy garlic sauce over the top, ensuring all the potatoes are coated. Garnish with freshly chopped parsley.
