 Caramel Stuffed Chocolate Chip Cookies 🍪🍫



These soft and gooey chocolate chip cookies are stuffed with a decadent caramel center. The combination of chocolate and caramel makes for a perfect treat that’s sure to satisfy your sweet tooth!


Ingredients (Makes 36 cookies)

¾ cup (200g) butter, softened to room temperature

1 cup (213g) brown sugar (light or dark, packed)

½ cup (100g) granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 ¾ cups (330g) all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

2 cups (350g) semi-sweet chocolate chips

About 36 caramels (check notes below)

Flaky sea salt (optional, for sprinkling)

Instructions:

Preheat the oven to 375°F (190°C) and line sheet pans with parchment paper.


Mix wet ingredients: In a large bowl or stand mixer, beat the softened butter, brown sugar, and granulated sugar on high speed until the mixture is pale, creamy, and sticks to the sides of the bowl (about 3-4 minutes). Scrape the bowl down once or twice to ensure even mixing.


Add eggs and vanilla: Add the eggs, one at a time, mixing and scraping down the sides after each addition. Mix in the vanilla extract.


Add dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter-sugar mixture, mixing until just combined.


Mix in chocolate chips: Add the chocolate chips and stir to incorporate.


Portion the cookies: Using a cookie scoop or spoon (about 1 ½ tablespoons of dough per cookie), scoop out cookie dough and place on the prepared baking sheet (about 8 cookies per pan).


Stuff with caramel: Take a caramel and press it into the center of each cookie dough ball. Gently press the cookie dough around the caramel to fully cover it, then roll the dough into a ball again.


Bake the cookies: Bake for 9-10 minutes, until the tops are just turning golden brown. Let them cool on the cookie sheet for a few minutes, then transfer to a wire rack to cool completely.


Optional: Once cooled, sprinkle with flaky sea salt for a gourmet touch!


Notes:

Caramels: Use individually wrapped caramels or caramel squares. You can cut them in half if they are too large for your cookie dough.

Sea Salt: A light sprinkle of flaky sea salt enhances the chocolate-caramel flavors perfectly!
