📋 Ingredients:


For the Pancakes:

🥞 2 cups all-purpose flour

🥄 2 tablespoons sugar

🧂 1 teaspoon baking powder

🧈 1/2 teaspoon baking soda

🧂 1/2 teaspoon salt

🥚 2 large eggs

🥛 2 cups buttermilk

🧈 1/4 cup melted butter


For the Smash Burgers:

🍖 1 pound ground beef (80/20 blend)

🧂 Salt and pepper to taste

🧀 4 slices cheddar cheese

🥬 Lettuce leaves

🍅 Tomato slices

🧅 Thinly sliced red onion

🍞 4 burger buns (optional, for serving)


Additional Ingredients:

🧈 Butter (for cooking pancakes)

🍔 Ketchup, mustard, and pickles (for serving)


📝 Instructions:


1️⃣ Prepare the Pancake Batter:

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the eggs, buttermilk, and melted butter.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.


2️⃣ Cook the Pancakes:

Heat a griddle or large skillet over medium heat and lightly grease with butter.

Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip and cook until golden brown on the other side, about 2 more minutes.

Remove the pancakes from the griddle and keep warm.


3️⃣ Make the Smash Burgers:

Divide the ground beef into 4 equal portions and shape them into loose balls.

Heat a large cast-iron skillet or griddle over high heat until very hot. Do not add any oil.

Place the beef balls in the skillet and immediately smash them flat with a spatula.

Season with salt and pepper. Cook for 2-3 minutes until the edges are crispy.

Flip the patties, place a slice of cheddar cheese on each one, and cook for another 2-3 minutes until the cheese is melted and the patties are cooked through.


4️⃣ Assemble the Savory Smash Burger Pancakes:

Place a pancake on a plate, top with a smash burger patty, lettuce, tomato, and red onion.

If desired, add another pancake on top or serve open-faced.

Repeat with the remaining pancakes and patties.


5️⃣ Serve:

Serve with ketchup, mustard, pickles, and additional toppings as desired.
