Apple & Cranberry Roasted Chicken 🍎🍗🍂
Ingredients:
4 bone-in chicken thighs
2 apples, sliced
1/2 cup dried cranberries
1 onion, sliced
2 tbsp olive oil
1 tbsp fresh rosemary, chopped
1 tsp thyme
1/2 cup chicken broth
Salt and pepper to taste
Instructions:
1️⃣ Preheat oven to 400°F (200°C). 2️⃣ Season chicken with salt, pepper, rosemary, and thyme. 3️⃣ Heat olive oil in a skillet and sear chicken on both sides until golden. 4️⃣ In a baking dish, place apples, cranberries, and onion. Top with chicken. 5️⃣ Pour chicken broth over everything and roast for 35-40 minutes until chicken is cooked through.
Notes:
Serve with mashed potatoes or roasted veggies!
