Ingredients:
4 boneless chicken breasts
½ cup mustard
6 slices bacon
½ cup honey
2 teaspoons dried onion flakes
1 cup sliced mushrooms
2 cups grated Colby/Jack cheese
Instructions:
Season the Chicken:
Sprinkle chicken breasts with seasoning salt, rubbing to coat evenly. Cover and refrigerate for 30 minutes to let the seasoning penetrate the chicken.
Cook the Bacon:
In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Set the bacon aside on a paper towel-lined plate, leaving the grease in the skillet.
Fry the Chicken:
In the same skillet with the bacon grease, cook the chicken breasts for 3-5 minutes per side, until golden brown. Once seared, transfer the chicken to a 9x13-inch baking dish.
Prepare Honey Mustard Sauce:
In a bowl, mix together the mustard, honey, and dried onion flakes. Adjust the sweetness or tanginess of the sauce to your preference.
Assemble the Dish:
Spread the honey mustard sauce generously over each chicken breast. Top with sliced mushrooms, crumbled bacon, and grated Colby/Jack cheese.
Bake:
Preheat your oven to 350°F (175°C). Bake the chicken for 30 minutes, or until fully cooked and the cheese is melted and bubbly.
Serve:
Let the chicken rest for a few minutes before serving. You can serve with additional honey mustard sauce on the side for extra flavor.
