Spaghetti with Smoked Salmon and Courgettes



Ingredients:

250g spaghetti

150g smoked salmon, cut into strips

2 zucchinis, cut into half slices

2 tablespoons olive oil

1 chopped garlic clove

100ml crème fraîche

1 tablespoon lemon juice

salt and pepper

Fresh or dried dill (optional)

Instructions:

Cook spaghetti according to package instructions. Drain and set aside.

In a large frying pan, heat olive oil over medium heat. Add the chopped garlic and sauté until golden.

Add the zucchini and sauté for about 5-7 minutes, until tender.

Add the crème fraîche and lemon juice. Mix well and simmer for a few minutes until the sauce thickens slightly.

Add the smoked salmon strips and mix gently to incorporate them into the sauce.

Add the spaghetti to the pan and toss until well coated.

Add salt and pepper to taste. Add dill if desired.

Serve hot, garnished with a few sprigs of dill or lemon zest, if you like.
