 Roasted Garlic and Herb Zucchini 😋



Ingredients:


- 2 medium zucchini, sliced into 1/2-inch thick half-moons

- 1 tbsp olive oil

- 1 tsp dried oregano

- 1 tsp dried basil

- 1/2 tsp salt

- 1/4 tsp black pepper

- 2 cloves garlic, minced


Directions:


1. Preheat oven to 400°F (200°C).

2. In a large bowl, combine the zucchini, olive oil, oregano, basil, salt, pepper, and garlic. Toss to coat.

3. Spread the zucchini in an even layer on a baking sheet.

4. Roast for 15-20 minutes, or until tender and slightly browned.

5. Enjoy as a side dish or add to salads, pasta dishes, or sandwiches.
