**Crispy Potato Skins**

**Ingredients:**
- 6 medium russet potatoes, scrubbed clean
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Optional: chives or parsley for garnish
**Directions:**
1. **Preheat the Oven:** Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
2. **Bake the Potatoes:** Poke a few holes in the potatoes with a fork. Rub them with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until they are tender when pierced with a fork. Remove and let them cool slightly.
3. **Scoop and Prepare the Skins:** Cut each potato in half lengthwise. Carefully scoop out most of the potato flesh, leaving about 1/4 inch of potato attached to the skin. Save the scooped-out potato for another use (like mashed potatoes or potato cakes).
4. **Crisp the Skins:** Brush the inside of each potato skin with olive oil and sprinkle with salt and pepper. Place the skins, cut side down, on the prepared baking sheet. Bake for 10 minutes, then flip the skins and bake for another 10 minutes, until crispy and golden brown.
5. **Add the Toppings:** Remove the skins from the oven and sprinkle each one with shredded cheddar cheese and crumbled bacon. Return to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.
6. **Serve:** Remove from the oven and let them cool slightly. Top each potato skin with a dollop of sour cream and sprinkle with chopped green onions. Add extra chives or parsley for garnish, if desired.
