Cheesy Ground Beef Quesadillas 🧀🌮
Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
4 large flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
Olive oil for cooking
Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions:
In a skillet over medium heat, add olive oil and sauté the onion until translucent. Add garlic and cook for 1 minute.
Add ground beef, chili powder, cumin, salt, and pepper. Cook until the beef is browned and cooked through. Drain excess fat if needed.
Remove beef mixture from the skillet and set aside. Wipe the skillet clean.
Place a tortilla in the skillet over medium heat. Sprinkle half of the tortilla with cheese, then add a portion of the beef mixture.
Top with more cheese, then fold the tortilla over. Cook until golden and crispy, about 2-3 minutes per side. Repeat with remaining tortillas.
Slice quesadillas into wedges and serve with your choice of toppings.
