Avocado Chicken Salad Lettuce Wraps
Ingredients:
- 2 cups cooked chicken breast, shredded
- 2 ripe avocados, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup Greek yogurt
- 2 tablespoons lime juice
- Salt and pepper to taste
- 8 large lettuce leaves (Romaine or Butter lettuce)
Directions:
1. In a large bowl, combine the shredded chicken, diced avocados, red onion, and cilantro.
2. In a separate small bowl, mix together the Greek yogurt, lime juice, salt, and pepper.
3. Pour the yogurt mixture over the chicken and avocado mixture, and gently stir until everything is well combined.
4. Lay out the lettuce leaves on a serving platter.
5. Spoon the avocado chicken salad evenly onto each lettuce leaf.
6. Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a cooler dish.
